Lemon Pound Cake Recipe

Here’s an easy recipe to make a healthier version of making a popular Indian healthy snack Dhokla. All the dhokla fans will enjoy eating this different version.

Ingredients for Lemon Pound Cake Recipe

For the cake

  • 2 ½ cups bread flour
  • 1 tbsp baking soda
  • 1/8 tbsp kosher salt
  • 2 cups of sugar
  • 1 cup butter
  • Zest from 3 lemons
  • 1/3 sour cream
  • Lemon juice

For Lemon syrup

  • ½ cup of sugar
  • ¼ tbsp lemon juice
  • Water

For icing

  • 1 tbsp butter
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Method

1 – Preheat Boss Desire OTG to 325° F.

2 – Butter a loaf pan & cover it with a piece of parchment paper. Leave enough parchment hanging over each side so that you can easily lift the loaf out of the pan.

3 – Whish flour, salt, and baking soda and set aside.

4 – Take a bowl; add beat together sugar, butter and lemon zest for 8 minutes. Add the sour cream and beat for one more minute.

5 – Add the lemon juice and beat for 1 minute.

6 – Stir the mixture and add the flour mixture. The batter should be thick and velvety.

7 – Pour the batter in the prepared loaf pan. Smooth the top with a spatula.
8 – Bake for 1 hour and 30 minutes till the cake comes out clean.
9 – Take a pan, combine sugar, lemon juice, and water. Stir occasionally and bring to a low boil. Let it boil for 5 minutes. The syrup is ready once it attains transparency.

10 – Remove the cake from the Desire OTG and let it cool down. With the cake still in the pan, pour half of the lemon syrup over the entire cake. Let it soak in.

11 – Then pour the remaining syrup over the cake. Let it continue cooling in the pan for another 15 minutes.

12 – With the help of parchment sling lift the cake out of the pan, and set it on a baking rack to let it cool completely.

13 – Melt the butter in the Boss Desire OTG for 10 to 15 seconds. Add the powdered sugar. Whisk together while adding the lemon juice one tablespoon at a time.

14 – Once the cake is completely cool, pour the icing over the lemon pound cake. Gently spread the icing so it completely covers the top. It should be white and thick. Slice and serve.
